included Sweet Corn (shucked and
bagged), yellow squash & patty pan,
cherry tomatoes &/or roma
tomatoes, cucumbers, and eggplants.
Note: Members who pick up on
Tuesdays at RiverLanding and
Thursdays at Tidal Creek may have
slightly different boxes. We decide on
what to pack depends on which
vegetables are ripe on each particular
day.
TIPS AND IDEAS
Squash: cube them and stir fry them in a bit of olive oil/small amount of
butter, season to taste salt/etc. yumm!!! Note: Try grilling your squash.
First slice them long way, so they hold on the grill and then marinate
them in Italian dressing or your favorite seasoning for 15 to 20 minutes.
Place them on the grill until nicely browned. ******One of our members
suggested cutting the patty pan squash in half and baking them****
Sweet corn: boil or slice down the rows of cernals and cut off the cob to
make homemade cream corn.
Cherry Tomatoes: wash and eat raw as a snack, add to favorite salad
Eggplant: Honestly this is not one of our families favorite, however
many people tell me how good they are in eggplant parmesean (sp??).
Try and let us know what you think.
Cucumbers: slice and eat raw or with salad &/or dressing
REMEMBER TO REFRIGERATE YOUR VEGETABLES AS SOON AS
RECEIVING THEM. WASH AND CLEAN THEM WELL.
ENJOY!!
